Chimayo Cocktail

The classic Chimayó cocktail served at Rancho de Chimayó, mixes unfiltered apple juice, crème de cassis, lemon juice, and tequila, but I found it a bit too sweet. My updated version leans on smoky mezcal and bright lime juice for a refreshing twist.

 

Ingredients

1/2 tsp ground cinnamon

1 1⁄2 oz apple cider, preferably unfiltered

1 1⁄2 oz premium mezcal

1/2 oz fresh lime juice

1/4 oz crème de cassis

1 slice unpeeled apple or dried apple slice, for garnish

Instructions

Assemble the drink: Fill the glass halfway with ice cubes. Pour in the apple cider, cinnamon, tequila, lemon juice, and crème de cassis. Shake in a cocktail shaker with ice.

Garnish and serve: Place the apple slice on the rim as a garnish. Serve immediately and enjoy!
