I love a good chicken salad, but all that mayo? Hard pass. Greek yogurt sounds like the hero swap, but it separates fast leaving you with a watery mess. Gross. Enter: the happy medium. Half mayo, half Greek yogurt, plus a little flax meal magic to hold it all together for days.

At the cafe, we serve this as a sandwich stacked with quick-pickled carrots (peel into long strips toss with lightly seasoned rice vinegar and let them sit overnight). The real glow-up, though? Cashews, nutritional yeast, curry, turmeric, and my favorite secret: fenugreek.

Rich, satisfying, and totally makeover-worthy. Bonus points if you swap in tofu or chickpeas—your call. This chicken salad is packed with flavor and texture. With roasted chicken, shredded carrots, crunchy roasted cashews, and a creamy curry-spiced dressing, it’s perfect for sandwiches, lettuce wraps, or straight from the bowl!

 

Ingredients:

For the Salad

  • 3 roasted chicken breasts, cubed into 1” pieces (seasoned with salt and pepper)

  • 6 oz shredded rainbow carrots (or any variety; pulse in a food processor for ease)

  • 3/4 cups roasted cashews

For the Dressing

  • 3⁄4 cups Duke’s mayonnaise

  • 3⁄4 cups plain, whole-fat Greek yogurt

  • 1 T tablespoons curry powder

  • 2 tsp turmeric

  • 1 1⁄2 tsp salt

  • 1 1⁄2 tsp garlic powder

  • 2 tsp fenugreek leaves (or powder)

  • 1 1⁄2 tsp dried coriander

  • 1 tablespoons ground flax meal

  • 2 T nutritional yeast

  1. Prepare the Salad Base: In a large mixing bowl, combine the roasted chicken, shredded carrots, and roasted cashews. Set aside.

  2. Make the Dressing: In a separate bowl, whisk together the mayonnaise, Greek yogurt, curry powder, turmeric, salt, garlic powder, fenugreek, coriander, flax meal, and nutritional yeast until smooth and well combined.

  3. Combine: Pour the dressing over the chicken mixture. Gently toss until everything is evenly coated and well mixed.

  4. Serve:

    1. Optional: Garnish with carrot ribbons or an extra sprinkle of cashews for presentation.

    2. Serve chilled or at room temperature in sandwiches, wraps, on greens, or with crackers.

  • Carrot Variations: Rainbow carrots add color, but regular shredded carrots work perfectly too.
